Ingredients

Icing

  • 80 gram raw sugar
  • 2 tablespoons Instant coffee powder
  • 20 g unsalted butter, softened
  • 3 teaspoons hot water

loaf

  • 60 grams walnuts
  • 60 grams unsalted butter, softened
  • 250 grams Water.
  • 2 Espresso Shots
  • 80 grams dates, fresh pitted
  • 100 grams dates, dried
  • 1/2 tsp bicarb soda
  • 220 grams brown sugar
  • 300 grams Self Raising Flour
  • 1 egg, lightly beaten

Recipe's preparation

    Loaf
      1. Preheat oven to 180/160C fan forced. Grease a loaf tin and line with baking paper.
    1. Place walnuts into mixing bowl. Chop, 3 seconds/ sp 5. Split into two halves and set aside.
    2. Place dates( fresh and dried) into mixing bowl. Chop s10 seconds/sp 5. Set aside.
    3. Add water, coffee and butter to mixing bowl. Heat 90C/1:30seconds/ sp 2. 
    4. Add dates and bicarb to mixing bowl. Mix 10seconds/sp 1.5
    5. Add in remaining ingredients, including one half of the walnuts. Mix 20 seconds on speed 4. Scrape down sides of mixing bowl then repeat 20 seconds/ sp 4.
    6. Pour into prepared tray and bake in oven about 50 mins. 
    7. Allow to cool 5 minutes in tray, then remove and cool completely on wire rack.
  1. Icing
    1. For the icing, add the raw sugar and coffee to a clean and dry mixing bowl. Process 10 seconds/ sp 10. Scrape down sides of bowl. 
    2. Add in softened butter and mix 10 seconds/ sp 3.
    3. Scrape out sugar mix into small bowl and mix hot water in by hand, one teaspoon at a time until it has reached desired thickness. If too runny, you can add extra icing sugar to thicken it. 
    4. Drizzle icing over Loaf. Allow to set 10 minutes. Slice, Eat and Enjoy!

    very yummy cake, agree with above comment the icing is way too strong and not the right consistency, i ended up adding icing sugar and a tablespoon on the coffee icing mixture and mixed that together and it made a really nice coffee tasting icing.

    Yum!

    I made this into 12 mini loaves and cooked in 30 mins at 160 degrees. I didn't have fresh dates so only used dried. I tasted one without the icing and they were great . With the icing they were even more delicious.

    Simple recipe with great results. Thanks for posting.

    I'm not sure if it's a typo but even 1 tablespoon of coffee powder in the icing is too strong. The cake is good without it though.
