oreo cupcakes
- 25 g white chocolate
- 125 g Butter, softened, cut into pieces
- 2 eggs
- 150 g Self Raising Flour
- 150 g caster sugar
- 100 g Oreo Cookies
Cookie and Cream icing
- 120 g raw sugar
- 250 g Butter
- 60 g Milk
- 1 teaspoon vanilla essence
- 100 g Oreo Cookies
Decorating
- Oreo Cookies
- Mini Oreo Biscuit

Preheat oven to 180 degree C. Prepare cupcake pan
Melt the white chocolate in a bowl of a double boiler. Keep over the warm water while preparing the batter.
Crush Oreos at Sp 6 for 3-5sec. Repeat for a couple more seconds if you want it finer.
Place crushed oreos in a bowl and set aside.
Insert Butterfly. Add all other ingredients. Mix for 2 min, sp 2.
Pour mixture into a bowl. Fold through the melted chocolate and cookie crumbs. (I found the melted chocolate stuck to the side of the Thermo bowl and set, so I still had to pour out and fold through again)
Divide mixture amoungst cupcake pans. Bake in oven for 15-20mins.
Leave in pan for 5 mins to cool before placing on cooling rack. Once completely cold, pipe icing one the cupcakes and decorate with extra oreo cookies.
Crush oreos in bowl for 5 sec, Sp6. Plus in bowl and set aside.
Follow directions on recipe chip for butter cream icing.
Mill sugar for 20 sec, Sp 10.
Insert buttfly. Add buttle, milk and vanilla essence and mix for 3 min, Sp 3.
While Thermomix is running, add the crushed cookies.
Pipe onto cooled cupcakes.

Tip
I made this as a double batch and turned them into mini cupcakes. I had a yield of about 7 dozen. When mixing the batter may need to start at "Gentle stir setting" speed and increase the speed as it becomes easier to mix.
