  • 275 grams Self Raising Flour
  • 170 grams sultanas
  • 80 grams Cornflakes

Recipe's preparation

  1. 1. Preheat oven to 180°C. Line 2 baking trays with non-stick baking paper.

    2. Beat together butter, sugar and vanilla essence, 20 seconds/speed 4.

    3. Scrape down bowl and repeat if necessary.

    4. Add eggs one at a time; crack through lid and process 10 seconds/ speed 4. Repeat with second egg.

    5. Add flour and sultanas to bowl 10 sec/sp4.

    6. Scrape down bowl and repeat until combined.

    7. Add cornflakes and either manually stir to avoid crushing the flakes too much, or 10sec/sp 4, Counter-clockwise operation"Counter-clockwise operation" .

    6. Roll into balls, small or big, depending on the size cookie you want, remembering they will rise and spread so leave adequate room on tray.

    7. Bake for 15-20 mins, leave on tray to cool for 5 minutes before transferring to wire rack.
