Ingredients

Crostolli

  • 1 lemon or orange (or combination of both), zest
  • 100 grams raw sugar
  • 4 eggs
  • 40 grams soft butter
  • 500 grams plain flour
  • dash dry white wine
  • 50 grams icing sugar, made in TM if preferred

Recipe's preparation

    Dough
  1. Add lemon/orange peel to bowl, mix 5 secs sp 9. Scrape down sides of bowl with spatula

    Add eggs, wine, butter and flour. Mix together for 10 secs speed 5 to combine

    Kneed for 1.5 minsDough mode"Dough mode"

    Turn out onto Thermomat or floured surface and roll into a ball

    Use rolling pin to roll as thin as possible or use a pasta machine. (I started on number 1 and then used numbers 5/6, see photo)

    Cut rolled pastry into rectangles. Cut a small slit in the middle and thread one end of rectangle through the hole to make a twist shape (see photo)

    Shallow fry in small batches in vegetable oil. This is very quick, just a couple of seconds, so don't walk away!

    Allow to dry on a paper towel, then place in a large bowl and sprinkle with icing sugar.

    Store in a sealed conatiner for up to 2 weeks.
