Ingredients

The base

  • 120 g Nuts your choice, I used raw cashews and pecans
  • 120 g Butter
  • 60 g raw sugar or rapadura sugar
  • 100 g Plain gluten free flour
  • 1/4 teaspoon vanilla extract

Filling

  • 100 g raw sugar or rapadura sugar
  • 250 g cream cheese, softened
  • 1 egg, large
  • 1/2 teaspoon vanilla extract

Topping

  • 1 can pears
  • 1 teaspoon sugar
  • 1/4 teaspoon ground cinnamon

Recipe's preparation

    For the base-
  1. Pre heat oven to 180 degrees

    Grease and line a square cake tin

    Chop nuts speed 8 for 5 seconds, set aside

    Place sugar in TM bowl and mill speed 9 for 3-6 seconds

    Add soft butter and cream with sugar. Speed 5 for 10-15 second. 

    Add nuts, flour and vanilla and mix at speed 4 or 5 for 20 seconds. Scrape down sides and mix for an extra 5 seconds

    Scrape mixture out into cake tin and spreed with spatula

    Bake for around 15-20 minutes till lightly golden

    Remove from oven and allow to cool

     

  2. For the filling
  3. Once the base has cooled off it's time to prepare the filling.

    Place sugar in TM bowl and mill speed 9 for around 4-6 seconds

    Add all other ingredients and mix speed 5 for 20 seconds. Scrape down sides and mix for a further 10 seconds

    Spread filling over the base and smooth with spatula

  4. For the topping
  5. Slice pears and lay them on top on the filling

    sprinkle cinnamon and sugar over the pears

  6. Final steps
  7. Place back into the oven and bake for 20-30 minutes. It should be slightly golden around the sides and firm (center may be soft but will firm after it has cooled).

    Allow to cool then place into the fridge for at least two hours. If you try to cut it up before then it will be too soft and fall apart. Trust me, I've made this mistake. Lol.

    Winner, winner! No need to refrigerate the base. I baked it straight away with success. I used only 50 g sweetener both in the base and for the filling. Fresh thinly sliced and peeled pears work well too.

    Oh Lordy this is divine! Hubby and toddler gobbled up a little taste test before I had to plate up the remainder to take to a morning tea. Although it was a lengthy process I would definitely make this again. A gorgeous recipe. Yum. 5 stars!!!!!!
