  • 90 grams Butter
  • 70 grams golden syrup
  • 60 grams brown sugar
  • 90 grams rolled oats
  • 40 grams rice puffs
  • 20 grams Coconut
  • choc chips

    DIY Muesli Bars - Nut Free
  1. Preheat oven to 140 degrees (Fan forced)


     


    Line a slice tray


     


    Place butter, golden syrup & brown sugar in the TM bowl & melt 3 mins/100 degrees/speed 2.


    Add Oats, Rice puffs & coconut & mix 30 secs/counter-clockwise operation/speed 4. scrape down bowl. Mix for another 10 secs if required.


     


    Press mixture into tray. Add choc chips on top & using a piece of baking paper press choc chips into mixture.


    Bake in oven for 17-20 mins, until light golden brown.


     


    Leave to cool in tray, cut into rectangle muesli bar shapes.


     


    Keep in air tight container for up to a week.

Tip

This recipe has been made with my fussy 5 year old in mind.

Muesli bars are chewy, if you prefer a harder bar, leave them for longer in the oven.

You can tweak it many ways;

Substitue honey for golden syrup.

If you want them sweeter add an extra 10-20g sugar, I tried to make them less sweet for my little ones.

Add pepitas or sunflower seeds or nuts if desired.

Use chopped dried fruit for fruit muesli bars eg apricots, a mix of dried berries. Chop them in TM bowl for 3-5 secs/speed 5 (or until desired size fruit)

Rice Puffs are found in the health food section of supermarket, they are puffed 100% Brown Rice, not rice bubbles.

    These are the first homemade muesli bars that my kids would actually eat and enjoy. Really nice and tasty also. Next time I'm hoping to halve the sugar amount and see how they turn out.

    Soooo yummy. Tastes like caramel and everybody loves them! A nice treat  to add to the kids luchbox...if I don't eat them all first!

    This was so yum, didn't last a week.... All gone in 2 days! First time I made it, it was perfect.. Second time, not so.. It's all in the oven being perfect temp I think and cutting when cold, as I was too impatient second time.so yum thank you for sharing.

    These are great! I slipped a little with the golden syrup, so the flavour was quite strong, but still yummy!

    I didn't have any choc chips, and I only had rice bubbles instead of the rice puffs, so I used them.  My kids like fruit in theirs, so I added some currants, sultanas and craisins, plus some sunflower seeds.  The base is really good, so I think you could add all sorts of dried fruits! 

    My husband has asked me to make them every week (although I think if he wants them he should learn to make them tmrc_emoticons.;) )

    So delicious. I did need to tweak to make this recipe work for me though.

    The first time, I made it as per recipe but found that it didn't cook through very well and was soggy in the middle (even though it was quite tasty - the texture was dreadful).

    I tried again, and actually made 1.5x quantity so it would fit my slice tray better. The second attempt was much more successful, I baked longer at a slightly higher temp (my old gas oven is not fantastic, and generally I need to do this for all recipes). I also used speed 2 instead of speed 4 once I added oats and rice puffs etc, and just for a tiny bit longer.

    Going to make this again, and hopefully will get the latter results rather than the former, as this is probably the best muesli bar recipes I have found for me.
