Danish Vegan Butter cookies Vaniljekranse

  • 200 grams dairy free spread, I use Buttery Nuttelex
  • 100 grams Confectioners Sugar, or icing sugar
  • 50 grams white sugar
  • 1 level tbsp cornflour
  • 2 level tbsp water, mix with cornflour
  • 1 level tbsp Oat Milk, You can use water
  • 2 heaped teaspoons sugar, for decoration
  • 1.5 tablespoons Vanilla Bean Paste, or vanilla extract

Recipe's preparation

    Preheat Oven
  1. Preheat oven to 180C or 160C fan forced.
    Line 2 baking sheets with greaseproof paper.
  2. Weigh dairy-free butter 200g
  3. Weigh in 100g confectioners sugarthen add in 50g white sugar
  4. Blend at speed 5 for 10 seconds then scrape down the bowl.
    then blend again at speed 5 for 30 seconds.
  5. Add 1.5 Tbsp Vanilla bean paste or Vanilla extract
    Add cornstarch mixture
    Blend at speed 4 for 20 seconds then scrpae down the side of the bowl.
    Then blend again for 40 seconds and add dairy free milk or water (1Tbsp) if needed.
  6. Put mix into a piping bag with a star.
    Put onto baking trays- pray with oil and dust with confectioners sugar- bake for 10-15 minutes until browned.

Tip

To make gluten free use gluten free flour
Spray cookies with vegetable oil before putting into the oven to help browning.
