Ingredients

Delicious Healthy Banana Muffins

  • 4 ripe bananas
  • 1 egg
  • 75 g olive oil, (or coconut oil)
  • 5 - 10 g vanilla bean paste or vanilla extract, (1 teaspoon)
  • 215 g wholemeal plain flour, (or regular plain flour)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • dash salt
  • 30 g crushed walnuts, (you could replace the LSA below with an additional 30g of crushed walnuts)
  • 30 g LSA, (linseeds, sunflower seeds & almonds)
  • 45 g sultanas, (optional - these could also be substituted with white choc chips)
  • 12 Whole walnuts, (for placing one on top of each muffin)

Recipe's preparation

    It's so easy, let's get baking
  1. Step 1: Preheat oven to 175C (fan forced)

    Step 2: Prepare 12 silicon muffin cases in your muffin tray or moulds (I don't grease mine and they lift out just fine).

    Step 3: WET INGREDIENTS - Add peeled bananas, egg, olive oil and vanilla bean paste to bowl.
    Combine 5 seconds, speed 5. Scrape down sides of bowl.

    Step 4: DRY INGREDIENTS - Add all dry ingredients (EXCEPT the sultanas/white choc chips and 12 whole walnuts) to bowl.
    Combine 15 seconds, speed 5. Scape down sides of bowl.

    Step 5: Add sultanas / white choc chips.
    Counter-clockwise operation"Counter-clockwise operation" 5 seconds, speed 3.

    Step 6: Spoon into muffin cases. Press a whole walnut into the top of each muffin.

    Step 7:Bake for 20 minutes at 175C

Tip

Substitues
You could substitute 50g of the flour with ground or blitzed oats.

For a gluten free (GF) variation you could substitute the flour for 50/50 coconut and almond flour.

To dress them up for a morning tea or party they're delicious with a cream cheese frosting.

Great recipe for diabetics or for a sugar free snack.

Baking with kids
I make this with my 3 year old and it's a quick easy and fun recipe to make with him. Plus he gets to enjoy a couple of sultanas as we bake.

Today, he decided to put sultanas on top instead of the whole walnuts. I'll try and remember to upload a picture next time with the walnuts on top.

The only downside... he can't take these to preschool in his lunchbox due to the nuts but it makes them extra great for home days and weekends and they're great for me for work morning tea or weekend morning teams with guests.

    Turned out great! Used 2 huge bananas 380gms and no walnuts. Added raisins instead of sultanas. I have made for my 10month old and 5 year old.
