Ingredients

Spice Mix

  • 1 Orange zest with no white pith
  • 2 sticks cinnamon
  • 1 teaspoons nutmeg ground
  • 2 whole cloves
  • 1/2 teaspoon ginger ground

Dough

  • 320 g Milk
  • 2 teaspoons dried yeast
  • 70 g Butter
  • 600 g baker's flour
  • 1 teaspoon salt
  • 110 g mixed dried fruit
  • 80 g mixed dried fruit, extra

Icing

  • 200 g sugar
  • 1 egg white
  • 1 teaspoon orange juice

Recipe's preparation

    Spice Mix
  1. Grease and line a 24cm round springform cake tin.
  2. Preheat oven to 180C.
  3. Add orange zest, cinnamon, nutmeg, cloves and ginger to bowl. Place lid with MC on.
  4. Mill ingredients 10 secs at speed 10. Scrape down sides with spatula and transfer to a small bowl.
  5. Dough
  6. Without washing the bowl, weigh in milk and yeast.
  7. Mix 2 min 30 sec / 37C / speed 2 with MC on.
  8. Weigh in butter.
  9. Mix 1 min 30 secs / 37C / speed 2 with MC on.
  10. Add flour, 1/2 spice mix, salt and dried fruit.
  11. Knead 4 min 30 secs.
  12. Turn dough onto Thermomat, roll into a ball, wrap and leave in a warm place to rise until doubled in size.
  13. When dough has risen, unwrap and roll into long log. Use rolling pin to roll into a long rectangle.
    Sprinkle half of remaining spice mix onto dough, then sprinkle evenly with dried fruit.
  14. Starting along the long side, roll the dough up, working it to a log with a diameter of approximately 4 cm.
    Taking care not to cut the Thermomat, cut the dough roll into 2 cm pieces.
  15. Arrange the pieces, standing on end, in a circular pattern in the cake tin.
    Cover with plastic film and leave in a warm place to rise again.
  16. When risen, bake in 180C oven till golden brown and cooked through.
  17. Remove from oven and cool on a rack. Drizzle with icing when cooled.

  19. Add sugar to bowl.

    Mill 10 sec / speed 10 with MC on.
  20. Add egg white and orange juice.
    Mix 10 secs / speed 6 with MC on.

Tip

Mixed dried fruit could be replaced with your choice of dried fruit if desired. This bun can be served on its own or with butter or jams.

    Very nice flavour with the spice mix. Not easy to find recipes without added sugar (required for diabetic). Didn't use icing. Delicious thankyou.

    You are correct that the dried fruit is used as the sweetening agent in the dough and then in the filling. There is sugar in the icing. If it is not sufficiently sweet for your guests, then a variation could easily be made. Hope you enjoy creating. Jackie

    It would be 3 to 4 teaspoons. You can adjust the cinnamon according to your own taste, I have only used cinnamon sticks so this is an estimate. Hope this helps, Jackie

    This doesn't have any sugar added, is this correct. I think it would be bland without it, even though there is a good amount of dried fruit.
