Recipe's preparation

    Roux
  1. No counter-clockwise operation"No counter-clockwise operation" Blend flour and milk for
    5 seconds/speed 6. Then cook for 15 minutes / 80 degrees / speed 4.
    Transfer mixture to a bowl and cover with cling wrap ensuring the cling wrap touches the surface of the mixture.
    Cool completely.
  2. Butter/Sugar mixture
  3. Mill sugar in a clean and dry Thermomix bowl for 15 seconds / speed 9.

    Add room temperature butter and chop for 5 seconds / speed 7. Insert butterfly and beat for 1 minute 30 seconds / speed 3.
    Add vanilla essence and beat for 5 seconds / speed 4
  4. Combine both mixtures
  5. Add cooled roux mixture to the butter and sugar mixture and beat for 2-3 minutes.

    Refrigerate for 10 minutes

Tip

Flavour as desired.
(Adding cocoa at step 1 makes a delicious chocolate frosting).

    Wow, thanks so much, I'm only at the point that I refrigerate for 10mins but it tastes delicious, so smooth and creamy, have made it for a red velvet cake.

    This is the best buttercream on the planet! Works great gluten free as well!Smile
