Ingredients
Flourless Walnut and Coffee Cake
- 4 eggs, separated
- 200 g raw sugar
- 350 g walnuts
- 1 teaspoon baking powder

Preheat the oven to 170.
Wash and dry the bowl very thoroughly, then heat it for 1 minute at 50 degrees. Insert the butterfly - making sure IT is perfectly clean and free of any oil. Add the egg whites and beat for 2 minutes on speed 3 (they will be all up the sides of the bowl, and that is just right). Remove to a clean dish and set aside. Rinse and dry the bowl, then grind the walnuts on speed 5 for 5 seconds so they are crumbly. Set them aside. Add the raw sugar to the bowl (don't wash it this time) and grind for 5 seconds on speed 9. Add the butterfly and the yolks and beat for 10 seconds on speed 4 (they should be lovely and creamy). Add a good tablespoon of the egg white and beat at speed 4, adding all the rest of the egg whites through the hole in the lid as you beat. Then add the walnuts straight away, and the teaspoon of baking powder. When it is all nicely incorporated (about 10 seconds) spoon it into a 20cm tin and bake for 50 minutes at 170.
Coffee Icing.
Dissolve 1 teaspoon of ground coffee beans in 2 tablespoons of boiling water. Place 300g raw sugar into the Thermomix and grind it for 20 seconds on speed 10. Add 60g butter and the coffee and beat for 10 seconds on speed 6 til combined.

Fabulous recipe. Easy and impressive. I whipped up a maple flavoured icing and it was yum.
My wife who is a coeliac made this for my birthday but ran out of time to get the icing done and instead sprinkled the top with icing sugar. Otherwise she followed the recipe exactly . She served it with a dollop of Greek yoghurt sprinkled with mixed spice. Deliciose! It is great to have an alternative to GF cakes recipes that use ground almonds. We will do the coffee icing next time! This recipe gets 5 stars from both of us!

I wasn't sure how it would turn out with so few ingredients, and was very pleasantly surprised by how moist and beautiful it turned out! I iced it with whipped cream flavoured with kahlua - self-indulgent I know but it's my birthday! Thank you for sharing.
