Ingredients

Custard

  • 6 cardamom pods
  • 4 star anise
  • 1 teaspoon white peppercorns
  • 1 cinnamon stick
  • 2 centimetre fresh ginger, sliced
  • 1 teaspoon chilli flakes (optional)
  • 300 grams cream
  • 250 grams Milk
  • 3 eggs
  • 2 egg yolks
  • 90 grams honey

Recipe's preparation

  1. Preheat the oven to 180 degrees.

     

    Place cardomom, star anise, peppercorns, cinnamon stick, chilli (if using) and ginger into Thermomix bowl and mill for 5 seconds on speed 7 so they are broken up and release their flavours.

    Add milk, cream and black tea and  heat for 10 minutes at 70 degrees.

    Strain into a jug, wash and dry TM bowl, and strain milk mixture back into the TM bowl (handy having two bowls!).  Add honey.

    Set Thermomix for 5 minutes at 70 degrees on speed 3, and pour eggs and yolks through the hole in the lid as the milk starts whizzing.

    Pour custard into 6 small teacups or ceramic ramekins and place into a baking dish.  Fill to half way up with boiling water from the kettle (best to do this once it is in the oven) and bake for 30 minutes.

    Sprinkle with cacao or cocoa or cinnamon, and serve with fresh fruit.

Tip

Be careful not to overheat the milk or it will curdle!

    A few observations on the missing details in this recipe.  I didn't get it 100% right, but did have a quite decent go at the custard.  A word of warning on my comments - I used 8 egg yolks instead of the combination of yolks and whole eggs so it might be a bit different.

    Tea - I used about 2 cups and this was too much.  The custard was tasty but still a bit runny.  I would suggest trying 1 cup instead.

    Heating - the first time it says to heat to 70 degrees, there isn't any instructions on stirring.  I used speed 3 since  this was used later in teh recipe.

    Baking - there isn't a temperature given.  I looked up a couple of other baked custard recipes and mostly they seemed to be between 180 and 200 degrees.  I did mine at 180 since I have a fan forced oven.

    Hope this helps others, but I am a raw beginner (and totally addicted) to this thermomix thing.
