Base

  • 90 grams Butter, Chopped
  • 75 grams brown sugar
  • 185 grams plain flour
  • 1 egg yolk

  • 220 grams brown sugar
  • 50 grams SR flour
  • 85 grams raisins
  • 120 grams sultanas
  • 185 grams roasted unsalted peanuts
  • 80 grams desicated coconut

Recipe's preparation

    Base
  1. Preheat oven to 180'C

  2. Grease and line a 20cm x 20cm laming ton tray 

  3. Place butter and sugar into TM bowl. Melt 3mins/60'C/speed 1

  4. Add four and egg yolk to TM bowl. Mix 15secs/speed 5. Scrap down the sides of the bowl. Mix 5secs/speed 5

  5. Press mixture into prepared tray. Push into sides and spread evenly

  6. Bake for 10 mins or until lightly browned on top. Allow to cool

  7. Topping
  8. Insert butterfly. Add eggs and sugar into TM bowl. Beat 2mins/speed 3 or until lighter in color and slightly thickened

  9. Remove butterfly. Add flour to TM bowl. Mix 15secs/speed 4. Scrap down sides of the bowl. Mix again 5secs/speed 4

  10. Add remaining ingredients and mix 10secs/speed 3 using the spatular to push mixture away from the sides. Scrape down the sides of the bowl. Mix again 5secs/speed 3

  11. Pour over prepared base

  12. Bake for 35-40 mins or until golden on the top

  13. Cool in pan before cutting

Sometimes I leave out the raisins, sultanas and peanuts and add 300g macadamias

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
