Gingernut bikkies
- 140 g Almond Flour
- 20 g Coconut Flour
- 1 tsp baking soda
- Pinch salt
- 1.5 tsp ground ginger
- 3 tbsp Rice malt syrup
- 0.5 tsp apple cider vinegar
- 2 tsp finely minced fresh ginger
- 1 tbsp coconut oil

- Pre heat oven to 170 deg C.
- Mill almonds (140g) and coconut (20g) for 20 sec "Blend" 9.
- Add to both flours, a pinch of salt, baking soda (1 tsp) and ground ginger (1.5 tsp).
- Add rice malt syrup (3 tbsp), apple cider vinegar (0.5 tsp) and fresh ginger (2 tsp), mix "Blend" 5, 10 seconds.
- Add 1 tbsp water if too dry.
Roll into a log, cut 12 pieces ands roll into balls and flatten to 5 cm diameter. - Bake for 5 minutes, then flatten and bake a further 12 to 15 minutes.
