- 150 grams unsalted butter softened
- 1 teaspoon vanilla extract
- 225 grams brown sugar
- 1 egg
- 200 grams plain flour
- 1 tablespoon ground ginger powder
- 1/4 teaspoon bicarbonate soda
- 220 grams Demerara sugar, For rolling

Preheat oven to 180 degrees.
Place butter, vanilla and sugar in TMX bowl. Insert butterfly. Cream together 2 minutes, speed 4 or until combined.
Scrape down sides if required. Add egg.
Cream approx. 4 minutes speed 4 or until light and creamy. Remove butterfly.
Add flour, bicarb and ginger. Combine until you have a smooth dough 20 seconds speed 5.
Roll tablespoons into balls and roll in Demerara sugar. Place on lined baking trays leaving room to spread.
Bake 10-12 minutes or until edges are golden. Cool on wire racks and try to hide from the kids.

lovely, i didd add a little more flour, i think they would nice with a little lemon flavouring.
I remembered the gingernut biscuits my mother used to make us as kids. The ones you buy I swear have changed taste over the years and are way smaller then what you used to get. When I found this recipe in the community I had to try it. I made these this morning and am very impressed. I don’t know if it’s the heat here in Rockhampton but the batter was still a bit runny on completion so I added another couple of tablespoons of plain flour and mixed that in for around 5 seconds on speed 3. Batter was so much better and next time I think I’ll add a heaped tablespoon of ginger powder or some finely diced glacé ginger to give them a bit more kick
These are the very best ginger biscuits EVER!!! I have made them many many times and they never fail. I can't speak higher, so easy to make. Thank you. Sorry it's taken me years to write a review.
