Ingredients
Banana Bread
- 150 grams almonds
- 220 grams Raw Honey
- 120 grams Butter, Softened
- 2 eggs
- 140 grams Self Raising Flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda, or Bicarbonate of soda
- 1 teaspoon vanilla extract
- 3 - 4 overripe bananas, Mashed

Measure almonds into bowl and mill for 15 seconds on 7. Pour into a bowl and set aside.
Into the bowl, measure the butter and honey. Mix for 1 minute on speed 4. Scrape sides of bowl.
Add eggs and mix for 20 seconds on speed 4. Scrape sides of bowl.
Add mashed banana and vanilla essence and mix for 20 seconds on speed 6.
Add flour, cinnamon, bicarb soda, almond meal and mix for 1 minute on speed 6 or until well combined.
Pour mixture into muffin or mini-muffin pans and 160C for approximately 30 - 40 minutes.

Tip
I'm trying to adapt all my recipes 1) to mini muffins so I can control my portions, still eat sweet things and get my weight down and 2) by adding raw or unboiled local honey to cut out sugar and to get the added anti-allergy benefit of the pollen having been processed by the bees when making the honey.
