Ingredients

Batter

  • 335 gram bananas, approx 3 ripe
  • 1/2 tsp vanilla extract
  • 1 egg
  • 45 gram Olive oil or coconut oil
  • 50 gram raw sugar
  • 55 gram brown sugar
  • 2-3 tablespoon honey, to taste
  • 3.5 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cinnamon
  • 180 gram almond or other non dairy milk
  • 140 gram almond meal
  • 200 gram gluten free flour blend
  • 110 gram gluten free oats

Recipe's preparation

    Batter
  1. Preheat oven to 180 C and line a large loaf tin with baking paper. 

     

    If desired, grind almond meal first. Place 140 g almonds into bowl. Grind approx 8 sec/sp 8 or until finely ground, but not releasing any oils. Set aside. 

     

  2. Place all ingredients from bananas through almond milk into the bowl and blend 10 sec/sp 4.

     

  3. Add remaining ingredients. Mix 10 sec/Counter-clockwise operation"Counter-clockwise operation" /sp 3. Scrape down and mix any flour from sides in with a spatula or re mix for a few more seconds on reverse. 

     

  4. Place batter into a baking paper lined bread loaf pan. Bake in 180C oven 45-60 minutes or until bread feels firm and is golden brown on top. Remove from oven and cool in the pan on a rack. Cool at least 1 hour before cutting or the bread will be too crumbly and fall apart. 

Tip

Please be careful if making this recipe for someone else who is gluten free. Oats, in particular, can be contaminated with gluten and some people who are gluten free cannot tolerate even uncontaminated oats. For our family who are wheat free, this recipe is perfect.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
