Ingredients
- 200 g Brazil Nuts, Soaked overnight or for at least 4 hours
- 30 g sunflower seeds or pepitas
- 2-3 bananas
- 3 Free-range eggs
- 30 g coconut oil
- 30 g Blackstrap Molasses
- 20 g Lemon juice or apple cider vinegar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon Vanilla powder
- 1/2 teaspoon bicarbonate of soda
- A pinch of salt
- 80 g blueberries
- 1 teaspoon lucuma powder and/or maca powder, (optional}
- 60 g sultanas or finely diced dates, (optional)

Preheat oven to 160° C
Prepare a loaf tin by lining it with baking sheet or greasing with coconut oil.
Place the soaked Brazils in the TM bowl and grind for 6 seconds on speed 9.
Add all the other ingredients except for the blueberries and mix for 10 seconds on speed 7.
Open lid and scrape down and mix for a further 6 seconds on speed 7.
Mix in blueberries for 6 seconds on Reverse + speed 4.
Pour batter into prepared loaf tin and bake until skewer comes out clean - about 1 hour.
Remove from tin and allow to cool in tin.
