Ingredients

Gluten Free Chocolate Cake

  • 225 grams gluten free flour, I use Wild Sourdough GF Flour
  • 80 grams Dutch cocoa powder (unsweetened)
  • 350-400 grams sugar, cake is not too sweet
  • 1 tsp Baking Powder, gluten free
  • 1 tsp bicarbonate of soda
  • 3 espresso coffee shots, top up with boiling water to make 250 mls
  • 3 eggs
  • 125 grams vegetable oil
  • 250 grams Milk
  • 1 level tsp Vanilla Paste
  • 2 level tbsp apple cider vinegar, add to milk

Recipe's preparation

  1. Add flour, cocoa, sugar baking powder and baking soda to jug. 1 mins speed 4.5. Scrape sides
    Add coffee, eggs, milk and vanilla paste. 3 mins speed 5, scrape sides and mix again for 2 mins
    Mixture will be quite runny. Don't stress.
    Pour cake into tin and bake 160C for 1 hour 15 mins until skewer comes out clean.
    When cool spread with dark choc ganache or chocolate icing.
