Ingredients

Cake

  • 280 grams white rice
  • 180 grams brown sugar
  • 75 grams arrowroot/tapioca flour
  • 65 grams desicated coconut
  • 2 teaspoons xanthan gum
  • 2 teaspoons Gluten Free Baking Powder
  • 1/8 teaspoon salt
  • 380 grams fresh/frozen mango flesh
  • 100 grams unsalted butter
  • 2 --- eggs lightly beaten

Icing

  • 60 grams raw sugar
  • 200 grams cream cheese
  • 1 teaspoon Vanilla extract/essence

Recipe's preparation

    Cake
  1. Preheat the oven to 175 degrees celcius for a fan forced oven


    Grease and line a rectangular slice pan 18cm x 28cm


    Mill the white rice in the TM bowl for 1 min on speed 9


    Add into the TM bowl containing the rice flour the dry ingredients brown sugar, arrowroot, desicated coconut, xanthan gum, baking powder and salt and mix for 10 sec on speed 6


    Put the dry ingredients from the TM bowl into a mixing bowl while you process the wet ingredients


    Measure in the unsalted butter and melt for 2 minutes on 60 degrees speed 2, set aside to cool


    Place the mango flesh into the TM bowl for 8 seconds on speed 8 to puree


    Return the dry ingredients into the TM bowl containing the mango puree, add in the lightly beaten eggs and the melted and cooled butter, mix for 5 seconds on speed 4, scrape down the sides and repeat for 5 seconds on speed 4


    Poor into the prepared slice tin


    Cook for approx 25 mins, checking with a skewer


    Let cool before icing

  2. Cream Cheese Icing
  3. Put the sugar into the TM bowl and mill for 10 seconds on speed 9


    Add in the cream cheese cut into cubes and the vanilla, mix for 10 seconds on speed 5, scrape down the sides and repeat for 10 seconds on speed 5


    Spread over the cooled cake

Tip

I have frozen this iced cake in pieces and it thawed out beautifully
