Ingredients
Gluten Free Passionfruit & Lemon Slice
- 500 grams sweetened condensed milk
- 140 grams unsalted butter
- 150 grams Gluten Free SR Flour
- 55 grams castor sugar, made in advance
- 80 grams dessicated coconut
- 125 grams lemon juice, I use frozen and add to the hot sweetened condensed milk
- 4 tablespoons tinned passionfruit pulp

I'm cooking this todayRecipe's preparation
- Using cookidoo recipe, make a double batch of SC Milk. With a total of 360g of sugar in a double batch, I reduce this back to 250g of sugar. Try less if you like. Set aside.
- Preheat oven to 180 and grease a lamington pan 20x30 cm and set aside
- For the BASE
Add butter into TM bowl and melt 3 min/90°C/speed 2
Then Add Gluten-Free SR flour, sugar & coconut then
Mix 20 sec/speed 4
Scrape down sides, it'll be crumbly
Pour this mixture into the prepared baking tin
Press down with a spoon to flatten the surface
Bake for 12 minutes, meanwhile... - For the TOPPING
Add to the TM bowl
500g condensed milk (place balance into fridge for later use)
lemon juice and
passionfruit into a clean TM bowl
Mix 10 sec/"Counter-clockwise operation" /speed 4
Scrape down the sides then mix again 5 sec/"Counter-clockwise operation" /speed 4
Pour the topping mix onto the baked base
Bake for a further 15 minutes
Cool completely in the fridge before cutting

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
