Gluten and dairy free lemon delicious slice
- 180 g almond meal
- 210 g caster sugar
- 80 g Organic coconut oil
- 4 --- lemon rind thin peelings
- 4 Lemons juiced
- 4 eggs, large
- 40 g gluten free flour

- Preheat oven to 180'C and line a slice tine (32cmx18cm)
Place almond meal, 60g sugar in bowl. mix 5sec/speed5
Add coconut oil and mix 10-15sec/speed 8 until combined.
Spead into prepared slice container and bake for 15 mins.
Remove from oven and turn oven to 140'C. - In a dry clean bowl add 30g sugar, and lemon peelings. chop for 10sec/speed 10. might need repeat step to ensure fine rind constistency.
Insert butterfly whisk.
Add rest of sugar 120g, and eggs and mix 3 mins/speed 4.
Add flour and lemon juice andmix 10 sec/speed 3. Scrape bowl and repeat.
Pour over baked base using back of spoon to help make it a gentle pour.
Bake for 40mins (140'C) or until set.
leave to cool in tin completely before slicing.

Tip
If the base doesnt come togther a little more coconut may be needed.
