Ingredients

Gluten, egg and sugar free Banana muffins

  • 3 very ripe bananas, can be more or less depending on size of banana and desire flavour strength
  • 110 g Butter, (melted - or hard margarine if lactose)
  • 120 g plain flour (gluten free)
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 1 tsp Vanilla Paste
  • 2 eggs, (120g Greek yoghurt)
  • 60 g Puree apple, (or 1/4 cup sugar)
  • 1/2 tsp salt
  • 1 tsp cinnamon, (optional)
  • 120 g chopped nuts or chocolate chips, (optional)

Recipe's preparation

  1. Preheat oven 180 deg C.
    Prepare muffin tray.
  2. Add Banana's to bowl 5 sec / sp 6 / MC on.
    Scrape sides of bowl and repeat if necessary.
  3. Add butter, eggs (or yoghurt if using) and apple puree (if using) and mix 5 sec / sp 4 / MC on
  4. Add rest of ingredients and mix 10 sec / sp 4 / MC on
  5. Evenly add mixture to muffin trays.
  6. Bake for 20-25 minutes for large/standard size muffin
    Bake 15-20 minutes for mini muffins
    Bake 40-45 minutes for a loaf.
  7. Muffins are ready once lightly browned on top and a skewer inserted into centre comes out clean.
  8. Remove muffins from tray and place of wire rack to cool.

Tip

These can be made with or without eggs and sugar.
Unknow result if made with wheat based flour.
Apple puree can also be made in Thermomix prior to making muffins.

Once cooked muffins can be frozen to be enjoyed at a later date

    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
