Recipe's preparation

  1. Weigh in mixing bowl: Sugar, Butter, Mixed Fruit, Cold water (or Sherry if you choose to use it instead), and add Bicarb and Mixed spice. Cook for 7 minutes/Varoma/Counter-clockwise operation"Counter-clockwise operation" Closed lid"Closed lid" Gentle stir setting"Gentle stir setting"

     

    With blades spinning (Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" ) add eggs, then gradually add the flour. This forms quite a thick batter, so you may have to stop a couple of times to scrape the bowl and give the mixture a hand. 

     

    Once thoroughly combined, pour into your chosen cake tin and bake in a moderate oven for 90-105 minutes. OR 

    If you're feeling game, try steaming this in your varoma! Add 1L of water to your bowl, and place the cake tin in your varoma. Set for 60min/Varoma/sp3. Cooking time with this will vary dependant on the choice of cake tin and whether you steam the whole cake in one go. 

Tip

I initially made this recipe using my TM5. The liquid itself didn't exceed the maximum capacity of the bowl, however it does froth up quite a lot. So if you do try this in your TM31, perhaps try with your basket on top for the boiling part of the recipe and just keep an eye on it, or lessen the quantities! tmrc_emoticons.)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
