Ingredients

Mini muffins

  • 230 g dark chocolate, Broken into pieces
  • 140 g hazelnuts
  • 3 Eggs, Large
  • 70 g Honey or Rice Malt Syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Recipe's preparation

  1. 1. Preheat the oven to 160'c and line 24 mini muffin tins with papercases

  2. 2. blend chocolate and hazelnuts for 10 seconds, speed 9

  3. 3. Add eggs, honey, vanilla and salt, blend 30 seconds, speed 4.

  4. 4. Fill cases almost to the top and bake 20 minutes.  Let cool in the pan. 

Tip

These are great warm but even better cold out of the fridge after a day or two.  They freeze and thaw easily.

    excellent recipe! im always looking for gluten free healthy treats for the kids and this really works well. i substituted half th chocolate for cacao nibs  and a little coconut oil and they were amazing. i also decided to make another batch with some cocout flour and oil to make 'muffins'.
