Healthier Banana Bread

  • 100 grams Applesauce, unsweetened--homemade in the Thermie tastes great!
  • 130 grams honey
  • 2 eggs, lightly beaten
  • 3 bananas, overriped, mashed
  • 2 cups wholemeal flour
  • 1 tsp baking soda or bi carb soda
  • 1/4 tsp salt

Recipe's preparation

    Healthier Banana Bread
  1. Preheat oven to 175 C.  Lightly grease a loaf pan--I use a canola oil spray, but whatever you normally use for greasing a pan should work just fine.

  2. Add applesauce and honey to bowl.  Mix 4 sec., spd. 2

  3. Add lightly beaten eggs and mashed bananas to bowl.  Mix 4 sec., spd. 2

  4. Add flour, bicarb/baking soda, and salt to bowl.  Mix 8 sec., spd.

  5. Bake in preheated oven for 60-65 minutes or until a toothpick inserted in the centre of the bread comes out clean.  Rest in the pan for 10 minutes, then turn out onto a wire rack to cool.

Tip

This is a wonderully dense and moist bread.  We often eat it slathered in some homemade honey-cinnamon butter and toasted on the grill.  Yum!

    I've made this so many times now that I am always looking for an easy shortcut.  I just made several loaves and literally just dumped all the ingredients in at the same time, mixed it up, and baked it!

    This most recent batch was made with quinoa flour, as I have been testing different flours to see what works well.  Coconut flour came out too dry, so I adjusted the ingredients to have more liquid/goo when I add the flour.  Other than that, they all seem to come out right.  I've done rice flour, quinoa flour, wholemeal SR and plain, plain flour, and almond meal.  So far, so good!  Still my best recipe, and the one that I make to impress!  Love

    I love this banana bread! I just prepare it in a lazier/easier way: tmrc_emoticons.;)

    Mix eggs ob speed 5, add bananas speed 5, add apple sauce and honey speed 3 and then follow the recipe.

    I've made this a couple of times now and the whole family loves it, closest to toasted cafe style I've ever made. I've substituted wholemeal spelt flour for half the wholemeal wheat and it works well this way too (150g of each).

    I used SR flour, too. Amazing! I LOVE banana breads/cakes, but I'm trying to be good. This is definitely a good substitute when I feel like a treat. Thanks so much for the recipe!
