Ingredients

Mixture

  • 190 grams Butter, Chopped
  • 140 grams sugar, Coconut or Rapadura are healthier alternates
  • 3 eggs
  • 100 grams Coconut self raising flour, If plain, raise as per EDC
  • 300 grams Gluten free self raising flour
  • 300 grams Nuts, dried fruit or chocolate (ie smarties/choc chips)

Recipe's preparation

  1. Preheat Oven, 180C.

    if necessary, convert plain flour to self raising as per EDC, set aside

    chop nuts and/dried fruit to preferred texture - chunky 'smartie' size works well. Blitz on turbo one second at a time and check, continue to blitz to desired  texture, set aside. Rinse bowl and blade if quite dirty  

    Melt butter, 4mins/60C/Sp2. 

    Add sugar, mix 2mins/Sp4.

    Add eggs and, if desired, 1 tsp vanilla, mix 30secs/Sp4.

    Add Flour, mix 1min/Sp3. 

    If quite thick add one tbsp olive oil to thin out slightly as coconut flour is quite drying

    Add fruit/nuts/smarties/chocolate chips, etc, and mix through on reverse, speed soft until slightly mixed, or turn out into a bowl and mix by hand with spatula.

    Place teaspoon fulls on baking trays covered with baking paper, allowing room for biscuits to spread. Wet fingers with water and smooth biscuits over to round out around edges for a more refined finish if desired. Can be larger if desired just watch oven time carefully. Bake 10-20min (depending on flour type). Watch closely and remove when lightly browned underneath

    I am not sure how they got the name healthy with all of that butter and sugar? Might want to rename them.

    self raising flour ratio is 100g plain flour to 1 tsp baking powder and between 1/4-1/2 cream of tartare, pinch salt. Combine all and mix 10 sec speed 5. Set aside.
