Ingredients

  • 1 tsp ground cinnamon

vanilla bean paste

  • 1 tsp Vanilla bean paste or extract

nutmeg

  • 1/4 tsp nutmeg, ground

ginger

  • 1 tsp Ginger, ground, optional

orange

  • 1 orange juice & zest

oil

  • 35 grams Macadamia or Olive oil

eggs

  • 3 eggs

walnuts

  • 50 grams walnuts, roughly chopped

Recipe's preparation

  1. Describe the preparation steps of your recipe

  2. Pre heat oven 150C (fanforced)

    Prepare a 20cm round or square cake tin, lining base & sides with baking paper.

     

  3. Mill almonds to meal 8-10 sec speed 7 remove & set aside

     

    Add orange zest to empty TM bowl 3 sec speed 8 or until a fine chop is acheived, this will depend on size of zest you started with.

     

    Add eggs 3 sec speed 5

     

    Add dried fruit, spices, vanilla, orange juice & oil 8 sec Counter-clockwise operation"Counter-clockwise operation" speed 4

     

    Add almonds & walnuts 4 sec Counter-clockwise operation"Counter-clockwise operation" speed 4

     

    Pour the cake batter into prepared tin.

     

    Bake in oven 1- 1 1/2 hrs, check with skewer at 1hr mark, if it comes out clean its cooked if not continue cooking till done.

     

    Can cover the top with foil to prevent over browning

     

    Remove from oven when cooked & allow to cool. 

     

    Store in an airtight container in an airtight container

    Cake can be soaked with your favourite liqueur or spirit. As soon as removed from oven, skewer holes in cake & drizzle 1/4 cup of chosen liquid over top of cake to infuse.

    Can be served with Vanilla custard or a thick natural yogurt.

    I made this today and was very happy with result. Added whatever dried fruit I had available such as cranberries, apricots, dates, sultanas, currants and also used sunflower kernels in place of the walnuts. Easy recipe and will certainly make again.

    Great, easy recipe. very tasty. i added some dried ginger pieces as well as the powder and was good, not overly gingery. i chopped up the dried fruit when i added them, as i used some big pieces like dried apricots, peaches and pears, and mango. also put a few glace cherries on the top so the kids would like it tmrc_emoticons.). Will make again! thank you.

    Made this today. Very easy and looks exactly like the picture. Tastes great and is perfect for morning tea. The  fruit added the sweetness. I used coconut oil.
