Ingredients

Filling

  • 2 level tbsp Dutch cocoa powder
  • 2 level tbsp Malted drink powder, ovaltine
  • 200 g milk chocolate
  • 2 level tbsp cocnut oil
  • 300 g unsalted butter
  • 250 g icing sugar

COOKIE dough

  • 300 g unsalted butter
  • 300 g sugar
  • 300 g plain flour
  • 2 portions eggs
  • 60 g cocoa powder

Recipe's preparation

    Method
  1. 1: cream butter and sugar until pale 1 min / speed 4
    2: add eggs and continue 1min/speed4 scrape sides.
    3: add the cocoa powder and beat 30sec/speed4
    4:add flour 1 min/ speed 2 scrape sides and repeat if it's not combined
    5: turn dough onto baking paper top with another sheet of baking paper and roll into a large rectangle about 1/4 inch thick
    Put dough on tray and place in the freezer for 30 minutes
    6: preheat oven to 180 degrees and line two baking trays with baking paper.
    7: take the dough out and use a rectangular cookie cutter to cut out 36 rectangle.
    Bake for 10 to 15 minutes then transfer to a wire rack to cool.
    Make the filling
    1: cream butter 1min/ speed4
    Add all other ingredients ( except chocolate and coconut oil. )1min/speed3 until well combined
    2: pipe or spread the filli g onto half of the cookies bottom side up then top with other cookie place in the fridge to firm up while you prepare the chocolate for coating.
    CHOCOLATE COATING
    1: place 150g chocolate in tm6 bowl chop for 4sec/ speed 9
    2: add coconut oil 5min/50 degree/speed 2
    Half way scrape sides.
    3: add remaining chocolate 1min/speed 2
    4: clean Thermomix bowl after melting chocolate by pouring a glass of milk in tm6 bowl mix 5sec/speed 8.
    Heat milk 5min/80 degree/speed 1.
    Take cookies out of fridge and dipp in melted chocolate place on baking paper and leave to set.
