Ingredients

Biscuits

  • 120 grams Butter, chopped
  • 340 grams honey
  • 120 grams brown sugar
  • 500 grams plain flour
  • 1 teaspoon bicarb soda
  • 2 teaspoons ground ginger
  • 1 teaspoon mixed spice
  • 1/2 teaspoon ground cloves
  • 1 tablespoon Milk

Icing

  • 1 egg white
  • 2 --- cups icing sugar
  • 2 teaspoons lemon juice
  • pink food colouring

Recipe's preparation

    Biscuits
  1. Add butter, honey and sugar in TM.  Cook 5 mins, 100 deg, speed 2.

    Add remaining ingredients. Blend 10 sec, speed 4.  Scrape down sides. Blend a few more seconds until well combined.

    Allow it cool for 1 hour.

    Preheat oven to 180 deg. Line baking trays with baking paper.  Roll 1 1/2 - 2 tsps of the dough into a ball. Place on tray. Continue with remaining dough. Allow room for spreading.  Bake for 10-12 mins until lightly golden.

    Allow to cool completely.

     

  2. Icing.

    Using a whisk, beat egg white until foaming. Gradually add icing sugar. Stir in lemon juice.  Spread over half cooled biscuits. Tint remaining icing pink.  Spread over remaining biscuits.  Allow to set for 30 mins.

    Enjoy.

Tip

Traditionally, honey jumbles are wide, finger shaped biscuits. Because it is a lot quicker, I just roll mine into balls. Either way, they are always a hit.  This is also a LARGE batch. Recipe can easily be halved.

    Beautiful. I have wanted to make these for awhile. When I realised I only had 70gm of honey, I substituted another 70g of pure maple syrup. I also rolled them into a log and cut finger lengths to make them in traditional shape. I used the recipe guide of 1.5 to 2 tsp of dough to get a guide of how long they should be when I cut the dough.

    When the first batch was cooked, I sampled one whilst still warm to check they were cooked through. Tasted just like a chai latte!

    Substituted fresh lime juice instead of lemon in icing as that was what I had - worked well.

    Lots of compliments from family and friends.
