Ingredients

Italian Apple Cake with Mascapone

  • 4 eggs
  • 200 g sugar
  • 250 g Mascarpone
  • 200 g plain flour
  • 16 g Lievito Pane Degu Angeli, (16g satchet yeast available from Italian deli)
  • 4 apples
  • 1/2 teaspoon cinnamon
  • 2 tablespoons icing sugar, (mixed with cinnamon for decoration - optional)
  • 1 tablespoon sugar, (for sprinkling on the cake top)

Recipe's preparation

  1. Preheat oven at 180 deg.
  2. Grease a 24 cm diameter cake pan or spring form pan and line the base with parchment paper.
  3. Clean and roughly chop the 2 apples. Mix with the cinnamon and set aside.
  4. Clean and finely slice 2 apples (for cake topping) and set aside.
  5. Place eggs into bowl and mix for 20 secs on Speed 6; add sugar, mascarpone, flour and yeast whilst the eggs are being mixed.
  6. Fold in the roughly chopped apples.
  7. Pour the mixture into the cake pan. Level it with the spatula then arrange the apple slices in a pattern to cover the entire surface of the cake. Sprinkle some sugar over the apples.
  8. Bake at 180 deg for 45 mins in a conventional oven or at 170 deg in a fan-forced oven for 45 mins.
  9. Allow the cake to cool in the oven before plating. Decorate with a dusting of icing sugar and cinnamon mix just before serving.

Lievito Pane Degu Angeli may be substituted with 1 1/2 teaspoons baking powder and 1 teaspoon vanilla extract.
