Cake

  • 100 g almonds
  • 200 g dark chocolate
  • 1/2 orange, zest only
  • 250 g Butter, cubed
  • 250 g raw sugar
  • 4 eggs
  • 1 tsp Vanilla Bean Paste
  • 150 g plain flour
  • 3 tsp baking powder

Icing

  • 250 g icing sugar
  • 40 g Butter, softened
  • 2 tbsp cocoa
  • 1 tbsp water

Recipe's preparation

    Jaffa Cake
  1. 1. Preheat oven to 160C (fan forced) and grease and line a 20cm round, deep cake tin
    2. Place the almonds into the bowl and blitz, sp 9, 10 secs to make almond meal. Put in a separate bowl and set aside
    3. Without rinsing bowl, add chocolate and orange zest and blitz, 10 sec, Sp 9. Put in a separate bowl and set aside.
    4. Add sugar and butter to the TM bowl and beat 1min 30 sec, sp 4 until pale and creamy.
    5. With blades running at Sp 4, add eggs one at a time through the lid (this should take about 30 secs). Scrape down the sides
    6. Add remaining ingredients, including almond meal and chocolare orange mix. Mix 30 sec Sp 4. Scrape down sides and mix again 20 secs Sp 4.
    7. Pour in to prepared tin and bake for 1 hour, or until cooked through.
    8. Leave cake in the tin for 5 minutes, then transfer to a wire rack to cool completely.
    9. Once cooled, make the icing by mixing all icing ingredients in a bowl. Spread over the top of the cake and decorate as desired.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
