Ingredients

Base

  • 250 g Marie biscuits
  • 180 g Butter, Cubed

Filling

  • 400 g condensed milk
  • 2 Lemons juiced
  • 2 teaspoons gelatin, Dissolved in 180 ml boiling water

Topping

  • 2 packages Raspberry Jelly Crystals, Dissolved in 450 ml boiling water

Recipe's preparation

    Base
  1. Prepare a slice tin by lining with baking paper.

    Place Marie biscuits into Thermomix and blend 10-15 sec/speed 7. Place crumbs in a bowl.

    Place butter into Thermomix, melt 2min/50 degrees/Gentle stir setting"Gentle stir setting" . Add crumbs back into Thermomix and blend 20sec/sp2. Press into prepared tin.

    Place tin in fridge. 

  2. Filling
  3. In clean Thermomix bowl, place Condensed milk, lemon juice and Gelatin dissolved in boiling water. Blend 30sec/sp3.

    Pour filling onto crumb base.

    Place in fridge.

  4. Topping
  5. Let the dissolved jelly cool and pour over the filling. Refridgerate overnight.

    Once set carefully lift out of tin and cut into slices.

Tip

The size of tin I use is 24x32 cm.

Any dry biscuit can be used for the base, as well as jelly flavour.

The length of time for the butter takes to melt varies depending if the butter is chilled. My melting time is based on chilled butter. 

I use the condensed milk recipe found in the recipe community, tinned condensed milk can be substituted.

When slicing slice, wipe knife after each cut to avoid transferring crumbs to top of jelly.
