- 250 g Butter
- 200 g dark chocolate
- 400 g sugar
- 300 g water
- 1 teaspoon instant coffee
- 110 g plain four
- 110 g SR flour
- 20 g cocoa
- 3 --- eggs

1. Place flours and cocoa in bowl and mix 10 sec, sp 5. Put aside.
2. Place sugar and chocolate in and chop until fine. Around 15 sec, sp 9.
3. Add butter, water and coffee to sugar and chocolate and melt. 3 min, 70 degrees, sp 2.
4. Add flour and mix 10 sec, sp 4. Scrape sides and mix until combined.
5. Add three eggs one at a time though mc whole for 10 sec, sp 4.
6. Pour mix into greased tin and bake at 150 degrees for around 1 3/4 hr.
Chocolate mud cake
Tip
Freezes really well. I don't ice as that would be all my kids would eat but a chocolate ganache is lovely.

Very dense but moist cake. Used 100g less sugar and was sweet enough. Iced with ganache. Mine was well cooked at 1 hour.
Perfect mud cake!
Excellent cake, baked for daughters 12th birthday party and the girls loved it. We made two cakes, layered with ganache in between, covered in ganache and topped with mini Mars bars and crushed freeze dried raspberries. Popped Kit Kat's around the outside for decoration.

kazistack: You dont actually taste the coffee.. Coffee halps bring the chocolate flavor out I am told.
This is the best mudcake recipe I have ever made. So easy and moist, and cuts well . We don't use instant coffee- so I just used a shot of espresso as part of the water.
