
Ingredients
- 240 grams Self Raising Flour
- 1 gram salt
- 115 gram caster sugar
- 360 gram Kiwifruit skin off, cut in chunks or mixture of Kiwifruit and banana
- 115 soft butter, cut in cubes
- 2 --- eggs
- 1/2 tsp vanilla
- 1 tsp bicarbonate soda
- 2 tablespoon Milk

Sift Flour & salt
Insert Butterfly
Cream butter and sugar 1 min speed 4 scrape down
add eggs 30 sec speed 3
Remove butterfly
add cut banana and kiwifruit 30 sec speed 3
scape sides then mix another 10 seconds
Mix Bicarbonate Soda with milk
add flour and vanilla and soda mixed with milk
mix at speed 3 until combined
Spoon into greased muffin trays
Bake in moderate oven 180 for 15 - 20 mins until muffins spring back
when touched
Tip
I made 12 mini muffins 12 medium muffins
for variation place 1tsp of mixture in each muffin hole place a slice of kiwifruit on top cover with another spoon of mix
or place a slice of banana on top of the filled batter sprinkle with a little brown sugar or coconut sugar
and bake.
Pipe with lemon cream icing if liked.
These muffins are quite moist and are lovely baked in friand pans or mini loaf tins and served with TM custard for a nice dessert

Love this recipe and have made the muffins a few times. I've also added strawberries to the banana/kiwi mix, still keeping fruit weight to around the 360g, and some chia. Any mashable fruit nearing expiry is great for this recipe, and kids who won't eat particular fruits won't even know they're eating it! Great recipe Cazzy22.
I think there were three they were - had a couple of past it bananas so i chucked them in too
