Ingredients

Cupcakes

  • 128 grams Flour, Plain, (1 cup)
  • 1 level teaspoon baking soda
  • 1/2 level teaspoon salt
  • 1 level teaspoon cinnamon, ground
  • 1/2 level teaspoon nutmeg, ground
  • 201 grams caster sugar, (1 cup)
  • 1 free range egg
  • 85 grams Rice Bran Oil, (1/4 cup)
  • 5 Apples (cooked), (pink lady or gala apples are good)
  • 100 grams Caramel Chips

Icing

  • 100 grams White Chocolate Buttons
  • 200 grams Caramel Buttons
  • 60 grams Dark Brown Sugar
  • 60 grams thickened cream

Recipe's preparation

    Cupcake Batter
  1. 1. Core and Quarter apples (you can leave skin on or peel apples-either is fine). Grate in TM, 10 seconds, Speed 7 or until completely grated. Pour into bowl and set aside.

  2. 2. Add oil, sugar and egg and beat together gently for 7 seconds, Speed 3 or until combined. Pour into bowl with apples. 

  3. 3. Add flour, baking soda, salt, cinnamon and nutmeg and combine in TM. 4-5 seconds, Gentle stir setting"Gentle stir setting"

  4. 4. Add apples and egg mixture to flour in TM. Add caramel chips. Mix together until combined. 7-10 seconds, Counter-clockwise operation"Counter-clockwise operation"  speed 2. (Make sure caramel chips stay whole)

  5. 5. Pour batter into prepared cupcake patties. Fill patties 3/4 full as they will rise slightly whilst cooking. 

  6. 6. Bake in 175 degrees celsius preheated oven for 20-30 minutes. Oven times will vary so check continuously. Cupcakes are cooked when skewer inserted into the middle comes out clean. Make sure you remove them straight away so the cakes stay moist. Once cooked, remove from oven and let cool before icing.

  7. Icing
  8. 1. Add all ingredients into TM bowl and cook 6-7 minutes, 60 degrees, Speed 2. Icing should be thick but not too thick.  It will thicken as it stands. Don't let it stand too long as it will be hard to ice once its too thick. Icing will dry quite smooth on cupcake. 

  9. 2. Add thin slices of apple on top of icing before serving for decoration.

    About to try this !!!  Have no idea how to cook the apples.  Lucky for Google.  Will rate soon.

     

    Okay this is post cupcake making and icing.   First,  I used milk and dark choclate drops in place of caramel in the cake mix.  In the icing I again substitute milk chocolate for caramel.   I loved these cakes.  My kids told me they taste funny, which I figure is just the nutmeg and stuff but they ate one each.  I ended up cooking the apples in the thermomix basket chopped up and steamed for ten or fifteen mins thrn follow3d the recipe from there.  I wpuld have given it 5 stars if , my kids loved it but I am giving it 4 stars for a somewhat healthy cupcake alternative,  easy to cook,  delish icing, and somethimg to do with all the soft apples I end up with by the end of a fortnight.
