Ingredients

Bottom Fudge Layer

  • 395 g condensed milk, Tin Woolworths Brand
  • 120 g Butter, Woolworths Brand
  • 160 g sugar, (White or castor)
  • 100 g Milk Bottle Sweets, Woolworths Brand
  • 50 g Glucose, Syrup - Queen
  • 2.5 tsp lemon essence, Queens - to taste
  • 1/4 tsp Yellow Colouring, Wilton Colouring Lemon Yellow
  • 170 g white chocolate melts, Nestle Cooking Choc Buttons

Top Fudge Layer

  • 395 g condensed milk, Tin Woolworths Brand
  • 120 g Butter, Woolworths Brand
  • 160 g Sugar Castor, ( or White)
  • 100 g Milk Bottle Sweets, Woolworths Brand
  • 50 g Glucose, Syrup - Queen
  • 2 tsp Queen Black Label Natural Vanilla Concentrated Extract:, Liquid
  • 170 g white chocolate melts, Nestle Cooking Choc Buttons

Decorative

  • Desiccated Coconut, for coating top if required

Recipe's preparation

  1. Bottom Fudge Layer - Complete First

     

    1. In your thermomix bowl add, Condensed Milk, Butter, Sugar, Milk Bottle Sweets, Glucose Syrup and Lemon Essence and Yellow colouring. 

     (Note: Colour – remember it will go lighter when the white chocolate is added)

    2. Cook at 100° Speed 3 for 8 Minutes with MC OFF

    3. Cook at VAROMA Temp, Speed 3 for 20 Minutes with MC OFF 

    4. When removing the lid this time – do it slowly – there is a lot of condensation buildup, wipe this dry before popping in the chocolate try not to let it drip into the bowl if you can help it. 

    5. Add White Chocolate Melts Speed 3 for 10-30 secs with MC OFF.

    6. Pour into a Slice tray (approx. 31cms) for a thin EVEN layer. Don’t forget the corners!

    7. Scrape out last bit with a spatula.

    8. Refrain from licking your fingers J

    9. Pop in fridge to set ready for top Layer

     

    CLEAN

    Rinse out and clean thermomix bowl, blade and lid and dry

     

    Top Fudge Layer

     

    1. In your thermomix bowl add, Condensed Milk, Butter, Sugar, Milk Bottle Sweets Glucose Syrup and Vanilla Essence. 

    2. Cook at 100° Speed 3 for 8 Minutes with MC OFF

    3. Cook at VAROMA Temp, Speed 3 for 20 Minutes with MC OFF

    7. Don’t forget the corners!

    8. Scrape out last bit with a spatula.

    9. Refrain from licking your fingers J

    10. Sprinkle on the coconut and pat down gently.

     

    Leave on your bench or in the fridge for approx. 3-4hrs or until set

    Cut with a knife into desired shapes

    Made this fudge this afternoon. It took a lot of effort (with the two layers) but it turned out well. Not a traditional fudgey consistency. A little more sticky and shiny. Tastes a lot of the milk bottles. I'd say this is more like a lolly slice rather than fudge.

    Just made this for my Christmas work morning tea tomorow and tastes amazing! I can definitely taste the milk bottle creaminess with the lemon layer like the lemon cheesecake and the vanilla layer like the biscuit cheesecake base and I love the look of the 2 layers, it also goes a really long way with the 2 layers - I got 64 very decent sized pieces which will be great for the office!
