  • 100 gram Butter, Room temp cut into cubes

  • 20 gram Desiccated Coconut

Coconut Topping

  • 2 eggs
  • 100 gram castor sugar
  • 50 gram Shredded coconut
  • 50 gram desicated coconut
  • 50 gram almonds

Lemon Curd

  • 40 gram lemon juice
  • 90 gram caster sugar
  • 80 gram Butter, Cut into cubes
  • 2 eggs

Recipe's preparation

    Method
  1. Preheat oven 180°C or 160°C fan forced. Grease and line the base and sides of a 19 x 29cm slice pan with baking paper, allowing sides to overhang.

  2. Place almonds into TM bowl and chop 6 sec/speed 6

  3. Add butter, sugar egg & coconut and mix 10sec/speed 4

  4. Spoon mixture into lined slice tray and smooth the surface with the back of a spoon. Bake for 15mins or until golden.

  5. Without cleaning the TM bowl add the topping ingredients and mix 5 sec/speed 5. Set aside.

  6. Clean and dry TM bowl and add butterfly then all the lemon curd ingredients.
    Cook 8mins/80°C/speed 3.

  7. Pour lemon curd over base, then sprinkle with topping. Bake for 20mins or until coconut is slightly golden. Set aside in pan to cool. Slice as required.

    I reduced the sugar to 40g for the base and topping and to 60g for the curd as I am trying to reduce the amount of sugar that I consume. I found that these amounts still gave enough sweetness to the slice.
