Ingredients

Cake

  • 2 Lemons, large, zest removed with veggie peeler
  • 125 g White or raw sugar
  • 125 g butter at room temperature
  • 2 Eggs, room temperature
  • 125 g SR flour
  • 65 g ground almonds

Drizzle topping

  • 75 g White Sugar(or Raw)
  • 2 Lemons, juiced, from above cake.

Recipe's preparation

    Cake
  1. Peel the yellow zest off the washed lemons.

    Mill with the sugar to produce castor sugar.

    Weigh in the butter & mix 2 minutes speed 5. Scrape down side as needed during this time. 

    If butter is cold, heat 37degrees for 30 seconds while beating.

    Weigh in flour, almond meal, mix at speed 2, 1 minute. Scrape down sides & mix again, 30 seconds speed 2. 

    Spread into the lined cake tin, 20cm square. 

    Bake 25 min at 180 until pale golden.

    While hot, sprinkle with sugar & drizzle with lemon juice.

    Allow to cool in pan & slice into small squares.

    Freezes well if there is any left!

     

     

     

Tip

If you wish to grind your own almonds, do so before you start, set aside.

I made a double quantity with only 2 eggs & added 1 cup milk, worked fine.

Needed less sugar than the recipe states for the topping, but you can play around with that.

    I love this recipe, not too many ingredients, simple to make and tastes delicious. Many thanks. It would be awesome if the recipe was edited and eggs added into it.

    Sorry about that, the eggs are added after beating butter & sugar. Add one at a time & beat the mixture on speed 5, scraping down sides of bowl.

    THANK YOU FOR YOUR RECIPE! But i nearly forgot to put in the eggs JenB coz you listed the eggs in the ingredients list, but not again in the instructions. Closed lid"Closed lid"
