Ingredients
Lemon Loaf
- 60g lemon juice, (approx. 2 lemons) and also zest of the 2 lemons
- 120 g unsalted butter, cubed
- 235 g caster sugar
- 2 eggs
- 250 g plain flour
- 1 tsp baking powder
- 1 pinch salt
- 100 g Milk
Citrus Dessert Syrup
- 170 g white sugar
- 15 g water
- 60 g lemon juice, (approx. 2 lemons)

- Line a loaf tin & preheat oven to 180°C
- Place into mixing bowl 2 lemon, zest of two lemons
- Add 120 g Unsalted Butter - cubed
- Add 235 g castor sugar
- Add 2 eggs
- "Closed lid"
- Mix 2 min/speed 4
- Scrape sides down with spatula
- Mix a further 10 sec/speed 4
- Add 250 g plain all purpose flour
- Add 1 teaspoon baking powder
- Add 1 pinch salt
- Add 100 g Milk
- Mix 10 sec/speed 3
- Scrape sides down with spatula
- Mix a further 5 sec/speed 3
- Spoon into tin and bake for 1 hour
- Clean and dry mixing bowl
- Before lemon loaf is finished baking make the "Citrus dessert syrup"
- Place into mixing bowl 170 g white sugar
- Add 15 g water
- Add 60 g lemon juice (approx. 2 lemons)
- Cook 3 min/90°C/speed 2
- Pour hot syrup over lemon loaf, garnish with coconut (optional) and serve.

Tip
After baking loaf and taken out of oven, use a fork or skewer and pierce loaf before adding citrus dessert syrup.
