Ingredients

Coating

  • 1/2 cup Pecans or walnuts
  • 1/2 cup sugar
  • 2 tablespoon melted butter
  • 2 teaspoon Lemon peel

Dough

  • 300 g plain flour
  • 4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 90 g Cold Butter, Cubed
  • 2 eggs
  • 150 g buttermilk

Glaze

  • 1 cup icing sugar
  • 2 tablespoon Lemon Juice or water

Recipe's preparation

  1. Coating:  

    Roughly chop pecans and then combine all ingredients in a bowl and set aside.

  2. Dough:

    Put flour, baking powder and salt into TM bowl.  Add butter and mix Speed 5 for 10 seconds.

     Add eggs and buttermilk and mix Speed 5 for 10 seconds.  The dough will be sticky.  Empty onto Thermomat or a board.  You may need to use a bit of flour on your hands to roll into balls.  Try to handle as little as possible to keep them as light as possible.  Roll into 17 balls.

    Roll each ball in coating mixture - you may have to press bits of pecans into each ball.

    Place in a greased and lined 22 or 23cm baking tin and bake for 20 to 25 minutes at 180 degrees C.

     When ready, invert immediately onto a plate, and drizzle with glaze.

     

  3. Glaze:

    Place in TM Bowl – 1 minute/80 degrees/speed 1.   Should be runny enough to drizzle on.

    I made this for a family dinner, and everyone liked it. I used almonds instead and just used all the juice of a lemon as it was only small. When i was making it though, the was really sticky (im sure if it was meant to be like that or the mixture was to runny and needed more flour) so i ended up adding more flour and handling them a little more than suggested to be able to roll them into balls. They still rose and came to together but weren't as fluffy as i would have hoped. Was a nice recipe tmrc_emoticons.)
