- 80 g Butter
- 160 g sugar
- 1 tsp vanilla bean extract
- 370 g Self Raising Flour
- 1 egg
- 320 g Milk
- Zest from 1 Lemon
- 1 tbsp Poppyseeds

Pre heat oven to 180 degrees.
Place patty cases into a muffin tin. Makes about 12
Place butter into bowl. "Closed lid" Blitz on speed 5 / 2 minutes.
Scrape down.
Add sugar and vanilla to bowl. "Closed lid" Blitz on speed 5 until pale.
Scrape down.
Add remaining ingredients. "Closed lid" Blitz on speed 5 until just combined.
Pour into patty cases.
Bake for 20 minutes or until golden on top.

Very nice. The muffins are light and fluffy. Next time I might try squeezing a tiny bit of juice into the mix to give it a little extra lemon taste. I also had to cood for an extra 8 mins, but that could be my dodgy oven. Good recipe though, thanks.
