Ingredients
Brownies
- 200 grams dark chocolate 70%
- 140 grams Butter
- 80 grams brown sugar
- 60 grams Maple syrup
- 4 eggs
- 3 tablespoons cocoa powder
- 1/2 teaspoon xanthan gum
- 1 tablespoon rice flour
- 1 tablespoon gluten free flour
- 100 grams chocolate chips

1. Preheat oven to 180 degrees (fan forced). Line a 20cm square baking tray.
2. Melt dark chocolate and butter, 6 minutes, 60C, speed 2.
3. Add all remaining ingredients (except chocolate chips) and mix for 10 seconds, speed 5.
4. Add chocolate chips and mix 5 seconds, "Counter-clockwise operation" , speed 3.
5. Cook for 30-40 minutes, until a skewer comes out almost clean (still a bit soft in the very centre and a few crumbs).
Tip
This recipe is adapted from the Low Fodmap Gluten Free Gooey Chocolate Cake recipe, with a few variations to make it more of the consistency of a brownie. More flour can be added to make it more of a cake consistency.
It is delicious served warm with lactose free cream and icecream and fresh berries.
