Ingredients
- 120 grams Desiccated Coconut
- 220 grams caster sugar
- 280 grams Wholemead Self-Raising Flour
- 2 mashed bananas
- 1 level teaspoon vanilla extract
- 250 grams Lite Coconut Milk
- 1 egg
- 80 grams dark chocolate chips or pieces, optional of course!

1. Preheat oven to 160 degrees. Grease a large loaf tin & line with baking paper
2. Place coconut into TM bowl, set at 90, "Gentle stir setting" , "Counter-clockwise operation" for 10 minutes or in a small frypan on stovetop for 2-3 mins. Place aside to cool.
3. Beat bananas, coconut milk, egg & vanilla in TM bowl, 30 secs. speed 5
4. Add dry ingredients & choc chips if using into wet ingredients & blend "Counter-clockwise operation" for 40-50 secs or until well combined.
5. Bake for 1hr, 5 mins. or until a skewer comes out clean.
6. Ice when cold if desired.

So delicious, lovely textured cake. I used 100g coconut and half the sugar.
Used 80g mixed dried fruit instead of chocolate.
These were super yummy and the family loved them. Second time round I used only 100g of coconut, 150g of sugar and normal self raising flour!! Will definitely be making them again and again...
Made these as muffins without the choc chips - turned out really well...
This cake was absolutely delicious!! My husband normally requests chocolate cake and he still raved about this cake. Very tasty....
Delicious cake - the toasted coconut makes it a real winner. I would personally halve the amount of sugar next time tho as the (soft) bananas and coconut milk add plenty of sweetness.
