Ingredients

  • 180 g Cashews
  • 90 g almonds
  • 90 g Walnuts / peanuts / pecans
  • 40 g Desiccated Coconut
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon powder
  • 125 g honey, Choose a low GI honey such as Yellow Box, Red Gum, Iron Bark or Stringy Bark.
  • 1 tbsp coconut oil

Recipe's preparation

  1. Preheat oven to 180 degrees C. 

    Line a slice tin with grease proof paper.

  2. Put all nuts into TM bowl. Closed lid"Closed lid" Turbo 3 or 4 times / 1 second until nuts are about 1/2cm in size.

  3. Add coconut, salt and cinnamon. Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" until ingredients are combined.

  4. Add vanilla, honey and coconut oil. Counter-clockwise operation"Counter-clockwise operation" Gentle stir setting"Gentle stir setting" until all ingredients are coated.

  5. Press mixture firmly into prepared tray and bake for 20 minutes.

    Allow to cool for a while in the tray before lifting out to a cooling rack and cutting into slices.

Tip

Please excuse any mistakes - this is my first recipe I've posted!

If you're not bothered about the GI of the slices, you could use any type of honey or add dried fruit or chocolate chips.

Once you trim off the sides of the slice and cut into 16 servings, each serving will be around 10g of carbs - all of them low GI.

    This is a lovely recipe! Can't wait for my hubby to try it! He was looking for a slice recipe that didn't include Chocolate, so this will hit the spot for sure! I took on the advice regarding the turbo of the nuts. So easy and such a delicious recipe! Will be happy to make again and recommend to others!

    Mine burnt tmrc_emoticons.(, my oven usually under cooks everything, I've never burnt anything. Next time I guess I'll need to do it at 160-170 degrees.

    Really enjoyed this slice, substituted the coconut for oats as they were in the cupboard after I forgot to buy the coconut!  Took it for a snack during golf and my group were very impressed.  They loved the accent of cinnamon and salt!  I agree with the other comment about ensuring you do not over 'tubo' the nuts, it really doesn't need much blitzing at all.  Quite expensive with the cashews so I am going to try it again by replacing them with peanuts.
