Lunchbox Chickpea Cookies
- 400 g Canned Chickpeas, One can, washed and drained
- 135 g Tahini- hulled
- 90 g brown sugar
- 2 teaspoon vanilla extract
- 1 teaspoon baking powder
- 100 g rolled oats
- 100 g chocolate chips, optional

- Add washed chickpeas to bowl and blend for 5-10 seconds on speed 5 until beginning to form a paste
- Add Tahini, sugar, vanilla and baking powder to chickpeas and blend for 10-15 seconds on speed 5 until well combined. Scrape down bowl
- Add oats and choc chips and blend"Counter-clockwise operation" speed 5, 10 seconds until combined
- Spoon tablespoon lots onto prepared baking paper trays. Bake 180 degrees for 15 minutes. Allow to partly cool on trays before transferring to cooling rack. Will remain soft until cool.
Tip

with peanut paste exchanged for Tahini to make them nut free, and choc chips added.
These freeze beautifully; put them frozen into the lunchbox, or eat straight from freezer!
