I'm cooking this todayRecipe's preparation
- 1.Pre-Heat your oven to 170 degrees and line a 20cm square cake tin with baking paper, making sure to leave plenty of paper hanging over the sides.
- 2.Insert butterfly , Separate your eggs and place the egg whites into a CLEAN and DRY bowl –Set yout TM for 3-4 minutes at speed 3.5 (or until stiff peaks form). Set the egg whites aside until needed.
- 3.Remove butterfly.Place butter in TM - set it for 3 mins , 60 degrees at speed 2.
- 4.Place the egg yolks and caster sugar together in the TM Bowl , beat the mix for 20 secs on speed 4, the mix should now appeara little frothy.
- 5.Set the TM now to continually mix at speed 2- 3 and add the vanilla extract then add the flour a few spoonfuls at a time.
- 6.Gradually add the lukewarm milk and continue to beat on speed 2-3 to combine all of the ingredients.
- 7.Add the egg whites to the bowl and gently fold together the mixture by setting the TM to reverse for 15 seconds.
- 8.Pour the batter into your prepared cake tin and place into your preheated oven and cook for 35 minutes or until a golden crust has formed on top of your cake.
- 9.Dust the top with icing sugar and serve
Tip
The butterfly will be needed in step 2.
I initially used a lamington sized tin which is why my picture appears more like a slice than a cake.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The recipe worked for the most part, although I did need to bake for 20 mins longer before it was set. It was too eggy-tasting for me, but those who like that will probaby enjoy this cake. I reduced the sugar to 100g and still found it sweet. I enjoyed trying out something new but it's not quite to our family's taste. Thanks for a clear and easy to follow recipe.
pr0nty:mine looks exactly like your's, it's in the oven now hope it turns out, also had to fold the egg whites in manually but also didn't realise the egg whites on the bottom of my bowl had turned into peaks so some raw egg white went into the cake mixture, but it turned out well tastes yummy and cooked it 15 mins longer
pr0nty:when you have to incorporate whipped egg whites into a mixture, start with a third of the whites and mix with a whisk to start the process. Then add the rest and fold through with a spatula. This should give a better more evenly mixed result.
My kids love this. I just extended cooking times by 5mins and it was perfect. Thanks

This was great - i was a bit nervous after reading some of the reviews but all fine (and delicious!) in the end.
However I did cook a further 20mins, and a speed for folding the egg whites through wiuld have been good. I tried about 1 but that was ineffective, and 4 seemed a bit brutal. I ended up using spatula to do it manually but wasnt sure if i was meant to be getting rid of the clouds or not. In the end i mostly did and it turned out fine I think, so...?
