Ingredients
10 Large Muffins
- 140 g Pistchios, shelled and coarsely chopped
- 120 g unsalted butter
- 4 Large free-range eggs
- 15 g orange flower water
- Zest of 1 Mandarin
- 300 g plain flour
- 10 g baking powder
- 10 g ground cinnamon
- 120 g brown sugar
- pinch fine salt
- 4 Mandarins segmented and cut in halves
- 15 g poppy seeds

Preheat oven to 180 degrees fan forced.
Cut out ten squares of baking paper and use to line muffin tin.
Add pistachios to mixing bowl turbo 1 second 2 times, set asside.
Using a zester, zest one of the mandarins, set asside.
Peel and segment the mandarins, removing any excess pith and seeds. Cut mandarin segments in half, set aside.
Melt unsalted butter 2 minutes, 37 degrees speed "Gentle stir setting" with butterfly (or as long as needed to melt butter), Let it cool.
With butterfly still in place, add eggs and whisk 40 seconds, speed 3.
Remove butterfly, add orange flour water and mandarin zest.
Add flour, baking powder, cinnamon, sugar and salt and two thirds of the pistachios then combine 40 seconds speed 4 or until well combined.
Keep a handfull of mandarin segments to garnish add the rest to mixing bowl along with poppy seeds, mix together 20 seconds speed 2.
Spoon mixture into prepared muffin tin, top with saved mandarin segments and chopped pistachios.
Bake for 25-30 minutes,or until a skewer inserted in centre comes out almost dry. Leave the muffins to cool slightly in the tin before lifting out onto a wire rack and cooling completely.
