- 100 g almond
- 80 g sugar
- 10 g rose water or normal water
- 5 drop bitter almond aroma, by RUF

- You can blanch the almonds quickly and easily by pouring boiling water on the almonds, wait a couple of minute, and then you can easily peel the skin . Let the almonds dry again - if you don't have time, 10 min in the oven @ 100°C and it's done. Or you peel the almonds the evening before and let them dry overnight.
- Scale 80 g sugar in the "Closed lid" and mill 5 sec / sp. 10. Set the icing sugar aside.
- Pour the blanched almonds into the "Closed lid" and mill 10 sec. / sp. 10.
- Add the icing sugar, the bitter almond aroma and the (rose) water and mix 10 sec. / sp. 9.
- Put the mixture on the bench and knead well, them form a roll. Keep it in the fridge wrapped in plastic foil or in a plastic container.

This is the translation of the recipe from the German recipe community by Melissa Alfi - which I did, tested and tasted - absolut wonderful... so you don't need to waste anymore time looking for Marzipan at Wollies or Coles.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
