Ingredients
Nana Bubby Marshmallow Slice
- 225 g gluten free flour
- 75 g rolled oats
- 75 g dessicated coconut
- 200 g Butter, melted
- 38 g brown sugar
Marshmallow
- 3 level tbsp gelatin
- 141 g water
- 240 g sugar
- 113 g water, extra
- 2 level tsp vanilla essence
Chocolate Coating
- 200 g chocolate, chopped
- 1 level tbsp canola oil

- Preheat oven to 180C and grease a 23cm x 33cm baking pan and line with baking paper. Place all ingredients for the base in the thermomix bowl and mix to combine. Tip into baking pan and press the mixute firmly into the base using the back of a spoon. Bake for 18-20 minutes or until golden brown. Allow to cool before spreading marshmallow over the base.
- To make the marshmallow: Place a glass bowl onto mixing bowl lid, weigh in gelatin and 1st measure of water and stir until mixed and set aside. Place sugar into mixing bowl and grind 5 sec/speed 9. Scrape down sides of mixing bowl with a spatula. Add 2nd measure of water, place simmering basket instead of measuring cup onto mixing bowl lid and cook 15 min/100C/Speed 2. Add reserved gelatin mixture, place simmering basket instead of measuring cup onto mixing bowl lid and heat 2 min/100C/speed 2. Allow mixture to cool in mixing bowl until temperature falls below 46C (approx 30 minutes). Insert butterfly whisk. Insert measuring cup and whip 7 min/speed 4. Add vanilla and mix 10 sec/speed 3. Remove butterfly whisk. Pour the marshmallow evenly over. the base and refrigerate for 20 minutes until set.
- For the chocolate coating: Place chocolate and oil in a small microwave-safe bowl and heat in 10-second increments, stirring between, until just melted. Mix until smooth. Allow the chocolate to set before slicing and serving

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
